Pulses

By now you may have heard that 2016 has been declared the
"International Year of Pulses" by the United Nations' Food and
Agriculture Organization. But what are pulses exactly, and why should
the prepared foods industry take any notice?
Pulses, or legumes, are protein-rich, high fiber seeds, and include all
manner of beans (kidney, black, lima, pinto), lentils, and chickpeas, and
dried peas, among many others. They are commonly found in a variety
of popular dishes like hummus, and many Indian and Latin dishes.
As for why you should take notice, think on this: the last time the
FAO had an "international year of" a food, it was 2013's quinoa - and
it exploded in popularity. And pulses are already well on their way -
according to DataSsentials' Menu Trends report, chickpeas alone
have increased in appearance on restaurant menus by 290 percent
since 2005.
Pulses are a great source of vital amino acids, vitamins and minerals.
They are appealing to older generations for their high iron, magnesium
and zinc. They are an effective replacement for or addition to any
meat-centered dish, which makes them appealing to a new generation
of meat- and gluten-free consumers.

CHICKPEA
SNACKS

Ahead of the curve, Biena Foods launched their Chickpea Snacks at a
single Whole Foods Market in Boston in 2012, and is now sold in over
4,000 stores nationwide, including other supermarkets and Target.
"With people looking to eat healthier these days, our snack is in line
with that trend," a representative says. "People are looking to eat
higher protein and increased fiber, and our snack provides both."
The snacks are sold in two and five-ounce bags, and come in six
flavors: Sea Salt, Rockin Ranch, Honey Roasted, Habanero, Barbeque
and Cinnamon Crunch. The company also recently debuted a 1.2 oz.
bag that they hope to market in convenience stores.

The FAO even recommends incorporating them into meals to help
people manage chronic heart conditions and cancer, since they lower
heart disease risk and lower blood cholesterol and pressure.

These hearty legumes are a veritable
cornucopia of buzzwords: vegan,
vegetarian, sustainable, high-protein,
low-fat, gluten-free and inexpensive.
When prepared, they are very filling, with a high fiber and protein
count that can aid weight loss. This also makes them a low glycemic
index food, which means that your blood sugar won't spike after eating
them - something especially appealing to those with diabetes. The
2015 - 2020 Dietary Guidelines for Americans even recommended that
consumers replace some of the meat and poultry in their daily meals
with more legumes.
Pulses go a long way in the realm of sustainability, too. Their consumption helps lessen the environmental impact of eating meat, and crops
can be harvested the world over - every culture has a bean of some
sort - benefiting small farmers everywhere. They're inexpensive to
both produce and purchase, and have a shelf life that can last years.
Lentils in particular are interesting, as they actually encourage
healthier soil while fixing nitrogen as they grow, instead of depleting
it of its nutrients, so the soil is actually better off for having nourished
the plant.
