Hard labor

Retailers face an uphill battle when it
comes to recruiting, training and keeping
skilled workers in the perimeter

upermarkets and c-stores don't look the same as they used to.
They don't operate in the same ways either. Perhaps most drastically, especially in the fresh perimeter departments, the products
and prepared foods are nothing like those of years gone by.

Nearly 35 percent said hiring and keeping qualified staff was the biggest
challenge, followed by not having enough time (24 percent) and tighter
payroll and labor budget (23 percent). In all 81 percent of the responses
had to do with labor challenges.

Instead of some rotisserie chickens, pre-cut potato wedges and chicken
strips, deli and prepared departments are now offering countless fresh
food options, all seemingly more complex than yesterday's items. With
these increased and intricate offerings comes more specialized job
requirements and more workers who are needed to perform a wider
range of duties. The workforce skills in delis, in-store bakeries and
c-store foodservice areas across the country are beginning to reach a
critical juncture.

"I recently heard someone say that the labor pool is now a puddle,"
says Jeff Lenard, vice-president of strategic industry initiatives for the
National Assocation of Convenience Stores. "Granted, that's a broad
statement, but labor is very tight right now in terms of finding and
keeping the right people."

In-store bakeries - and bakeries in general - are also combating these
problems, as are many industries that rely on skilled labor. The American
Bakers Association (ABA) Human Resources Committee, in conjunction with the American Society of Baking (ASB), last year commissioned
Cypress Research Associates to conduct a year-long study from bakers,
suppliers and manufacturers about the challenges and solutions for
attracting, training and retaining skilled, hourly workers.

The Food Marketing Institute (FMI), along with the Retail Feedback
Group, released the 2016 Supermarket Department Manager Survey last
fall. When the survey's respondents - which included managers from
nearly 70 companies from Albertsons to Winn Dixie- were asked about
the biggest challenges faced in doing a job effectively, their answers
spoke volumes.
