It was telling that even at a food show devoted to specialty cheeses,
cured meats, high-end pastries and all manner of top-shelf sauces,
jellies, crackers, chocolates, olive oils and countless other products,
Amazon and Walmart and Lidl/Aldi - and the wider worlds they represent - were at the tips of attendees' brains.

top online grocery platforms (they recently inked a deal with Target)
is obviously bullish on delivery/pickup, but he was also conscious of
his audience when he spoke at a convention roundtable. "If the high
quality is not there, the consumer is not happy," he said. "It's a balance
between speed and quality."

The Specialty Food Association's annual Winter Fancy Food Show,
held Jan. 21-23 in San Francisco, drew more than 25,000 attendees and
1,400 exhibitors. Specialties generate $138 billion in annual sales and
account for 15 to 16 percent of all grocery sales, Phil Kafarakis, the New
York-based association's president, told attendees.

Finding that balance seems to be where the conversation is right now
on delivery/pickup, and nowhere is that truer than in the prepared
foods category, where suppliers, retailers and online platforms are
trying to figure out if customers want their hot deli items delivered, and
if so, how exactly they'll do it?

The category is clearly thriving. But that doesn't mean specialties are
immune from the forces that have rocked the retail grocery world
in the past year or so: Walmart buying Jet.com and other online
platforms; Amazon buying Whole Foods; German discount giant
Aldi increasing its U.S. footprint and its arch-rival Lidl jumping into
the U.S. market. Online ordering of groceries and all that flows from
it -delivery, curbside pickup, lockers, etc. -was a hot topic at Winter
Fancy Food. Harley Butler, the marketing director of Shipt, one of the

coming - sooner than many people think.
The question is, who will figure out how to do it in a way that makes the
customer happy and makes good business sense. A tough balancing
act indeed.
