U.S. ﬂour output gains 0.4% in 2010 to 416,200,000 cwts

by U.S. mills has increased in 28 years and decreased in 13. In this same period, annual changes ranged from the increase of 20,680,000 cwts in 1983 to the decrease of 16,749,000 cwts in 2001. Since the start of Census Bureau compilations in 1926, output has increased in 54 years and decreased in 30. For the entire period, production has risen at an annual average rate of 2,447,015 cwts. The 2010 increase of 1,542,000 cwts, or 0.4%, reﬂected a signiﬁcant expansion in semolina output and a moderate gain for ﬂour-ex-semolina. In addition, a sizable upward revision in third-quarter ﬂour output made by the current report contributed to the year’s net gain. Production of wheat ﬂour in 2010 included durum semolina output of 32,728,000 cwts, the Census Bureau said. The third largest, it was up 1,160,000, or 3.7%, from 31,568,000 cwts in 2009. Flour production-ex-semolina in 2010 increased 382,000, or 0.1%, to 383,472,000 cwts, compared with 383,090,000 in 2009. It was the fourth largest on record. The high was 389,521,000 in 2000. In the current report, third-quarter ﬂour was raised 596,000 cwts from the

original number issued in the previous quarter and based on the revised number aggregate output in the ﬁrst three quarters (January-September) was slightly up, against initial indications that it was down. Average production of ﬂour per working day in 2010 was computed by Milling & Baking News at 1,356,000 cwts, up from 1,351,000 in 2009. The record daily average was 1,372,000 cwts in 2000. Capacity 1,545,000 cwts, yearend high The Census Bureau estimated the 24-hour capacity of U.S. mills in October-December 2010 at a yearend high of 1,545,000 cwts, up 11,000 from 1,534,000 a year earlier. Daily capacity was 1,492,000 cwts as recently as 2005. The peak daily capacity by all quarters was 1,604,000 cwts in April-June 2001, followed by 1,588,000 in JanuaryMarch 2001. Operating rate holding at 88% Average rate of ﬂour milling operations in 2010 was 88% of capacity based on the six-day week, unchanged from 2009. Wheat grind by U.S. mills in 2010 aggregated 899,523,000 bus, up 0.4% from 896,060,000 in 2009.

Weighted average ﬂour extraction rate (the average percentage of ﬂour extracted from wheat) by U.S. mills in 2010 was a near record 77.1%, down from the record for the past several decades of 77.2% in 2009, and against 76.4% in 2008. Millfeed production in 2010 totaled 6,458,402 tons, down less than 0.1% from 6,460,338 in 2009. The record was 7,374,115 tons in 2000.
