Dairy Products
Dry dairy product prices were mostly
steady to higher even though demand
was light during the quiet, holiday-shortened week. Wholesale cheese and CME
Group butter prices were higher. Milk offered to dryers increased in some regions,
with some manufacturers seeking to increase product inventories. Transportation was an issue as the week progressed
and major winter storms moved across
the Midwest and Northeast.
Nonfat dry milk prices were firm to 4c
a lb higher. Manufacturers said increasing
milk production, and especially increased
milk offers during the holiday weeks,
offered opportunities to move beyond
current deficits in N.D.M. contract fulfillment. Buying was hand to mouth.
Dry whey prices were slightly higher.
In the Central region, some manufacturers were attempting to rebuild stocks
amid steady demand. In the West, production increased marginally, and demand was static, with the market in holiday mode. In the Northeast, production
was increasing amid heavier milk supplies, but inventories remained tight on
good demand for whey, the lowest-priced

dairy protein on a per-unit basis, according to the U.S. Department of Agriculture.
Buttermilk powder prices were raised
1c a lb. Prices were steady in the West
amid limited supplies. Manufacturers
reported a jump in production as bottler
demand remained light because of the
midweek holidays the last two weeks.
In the Central region, prices were steady
to slightly higher. Production increased,
but supplies remained tight.
Lactose was the exception to mostly
higher prices with values falling 6c a lb
amid variable inventories. Production
recently increased at many facilities.
Both acid and rennet casein prices
made 10c-a-lb upward adjustments in a
firming market. Gains followed higher
prices in other protein markets, including higher prices for first-quarter caseinate prices reported last week.
Cheese prices, though higher last week,
were expected to soften under heavier
stocks. Midwest cheese featured an inventory surplus, leading to a cutback in production. In the West, production also has
been limited by tight milk supplies, and
prices have moved higher. CME Group
