Bakery Flour
Bookings of bakery flour were light
last week. Prices were raised.
The span between Christmas and
New Year's was mostly quiet in flour
markets, which often is the case around
the winter holidays. Most bakers in advance of the break for Christmas booked
what supply was necessary to ensure a
smooth start to 2017. Flour coverage for
January-March at that time was estimated at about 70% with little difference in
ownership between the various grades.
Last week, individual bakers also covered outstanding components, primarily
basis or millfeed, which enabled them to
complete more first-quarter contracts.
Millers indicated some bakers also
put on additional coverage of the futures component of flour contracts into
the second and even third quarters. This
business was not heavy given the already
extensive futures coverage into 2017.
First-quarter millfeed prices were on
the rise, rewarding bakers who held off on
booking millfeed credits. At the same time,
April-June millfeed prices remained below year-ago values, suggesting millfeed
may remain the principal impediment to
more extensive flour coverage.
Mill grind was reduced because of
Christmas-related downtime. Most mills
operated only three to four days. MBN

regional brands of family flour were

With holiday-related demand now
past, grocers and other principal outlets
turned their attention to clearing shelves
and working down inventories. This
happens almost every year at this time.
Shipments weren't expected to pick up
until after those inventories are reduced.
Demand for family flour will revert to
the routine for the next few weeks. Shipments typically don't increase again until the approach of Easter.
In the market for private label flour,
most grocers, club store, mass merchandisers and other major buyers earlier
covered their flour needs through the
first quarter of 2017, and April-June coverage was estimated at about 50%. MBN

Semolina
Bookings of semolina, granulars and
durum flour were nearly lacking last
week. Price adjustments were minor.
The price of choice milling hard amber
durum as quoted at the Chicago gateway for delivery beyond remained $8.50
a bu. The Minneapolis price was $8.20.
Durum millers noted durum shipments
during the week were only those related
to contracts. Durum offers on the spot
market were absent, providing no reason
to view the market as stronger or weaker
than in recent weeks.
Pasta manufacturers earlier booked
about 80% of their prospective semolina
needs for the first quarter of 2017, and no
additional coverage was indicated in the
days between Christmas and New Year's.
A blizzard roared across the northern

Plains on Christmas day. Even before the
storm, railroads had been slipping further
and further behind shipping schedules,
and the storm extended delays by another two to three days, according to millers.
In particular, the Canadian Pacific Railway has fallen at least two weeks behind
in placing rail cars and locomotives.
Agriculture and Agri-Food Canada
(A.A.F.C.) on Dec. 21 commented with regard to the nation's 2016 durum crop, which
set a new record at 7.8 million tonnes, "The
average grade quality of the durum crop
is lower than for 2015-16 and the past fiveyear average because of too much rain. The
average protein is lower than for 2015-16
but is at the average of the past five years."
The Canadian ministry added while Canadian durum exports should increase from
the previous year, "the delayed harvest and
the lower average quality of the Canadian
durum crop are expected to limit the increase in exports and a significantly larger
portion of the crop is expected to end up in
the feed, waste and dockage category."
A.A.F.C. forecast 2016-17 durum ending stocks at 2.5 million tonnes, more
than double the 2015-16 carryout and
95% larger than the past five-year average of 1.28 million tonnes. "Carryout
stocks are expected to be mostly lower
grade durum," the ministry said. MBN
