understands this than the US meat
and poultry industry. In 2010 our industry
celebrated a number of successes
brought to fruition
through years of
focused hard work and
dedication.
In the area of food

here is an American proverb that
states, “Success is a ladder you

industry applauded the reaffi rmation
of the languishing free-trade agreement
between the US and South Korea.

released by the Centers for Disease
Control and Prevention.
Ten years ago, the US public
health goal for reduction in E. coli infections
in Americans was set at one
case per 100,000 people. In 2009, that
goal was met when the incidence of
E. coli O157:H7 infections in Americans
dropped from 1.12 cases per
100,000 people in 2008 to .99 cases
per 100,000 people in 2009.
These dramatic reductions have
been realized because of an ongoing
commitment, both in expenditures
and in cooperation between the
federal government and industry. In
fact, nearly $1.3 billion is spent on
food-safety research annually and the
dramatic decrease in the presence of
E. coli and related illnesses shows that
these monies have been well spent.
In the area of worker safety, the
meat and poultry industry continues
to build on a two-decade record of improvement
in workplace safety. Numbers

pork exports by $2 billion and result in
more than 26,700 new American jobs.
While these and other achieve-
ments are encouraging and evidence
of our extensive efforts, we know that
there are more rungs on the ladder left
to climb. Thus, we turn our attention
to our priorities for the new year.
Even one foodborne illness is one
too many, which is why the industry
will continue to invest in new technologies
and control systems in 2011
to build upon the safety success of
the past years.
Emphasizing nutrition and health
benefi ts of our products to both consumers
and policymakers is another
top priority for the Institute for the
coming year. As we refl ect on the justreleased
2010 US Dietary Guidelines
for Americans, we will continue to accentuate
the many positive nutritional

AMI leads processors into the future

benefi ts of our products as part of a
healthy, balanced diet. We will continue
to communicate recommendations
and actions on reducing dietary
sodium intake and the associated effect
on meat and poultry products and
urge that any sodium intake recommendations
are science-based, achievable
in the current food supply and do
not adversely affect the safety of meat
and poultry products.
Finally, in the coming year, AMI
will continue to push for the withdrawal
and revision of a Grain Inspection,
Packers and Stockyards Administration
(GIPSA) proposed rule that exceeds
the Congressional mandate in
the 2008 Farm Bill and contradicts
Federal Court precedents. As a result,
it would increase the legal risk to processors
using marketing agreements
by making it easier for trial lawyers
to sue them successfully under the
Packers and Stockyards Act. Consequently,
the proposed rule would essentially
recommoditize the meat and
poultry industry, reducing the wide
array of customer-driven, value-added
products developed over the past
two decades.
And turning back the clock has
enormous costs associated with it. An
economic analysis of the proposed rule
conducted by John Dunham and Associates
found that the rule, if implemented,
will increase meat and poultry
prices by over 3 percent, cause the
loss of approximately 104,000 jobs
and adversely affect domestic GDP
by $14 billion.
These are just a few of AMI’s pri-
orities for 2011. Our continuing goal is
to ensure that the US meat and poultry
supply remains the safest, most abundant
and most effi cient in the world. ■
