Olam: The Road to Market - September 2017 - 5

takes almost eight years to go from growing a garlic
shoot to planting a clove. Garlic variety improvement
is also an area of focus. This includes increasing
bulb and clove size, yield, solids content and time to
maturity.
"We grow garlic in California, with additional
processing operations in China, and blend, toast
and customize the garlic to meet customers'
specifications," says Mr. Estep.

Tomatoes, Capsicums and More
The experts at Olam SVI's California tomato
operations assist customers with commercialization
of tomato products, taking them from concept to
retail- and industrial-ready packaged product. As
the largest organic tomato producer in the world,
and a global sourcer of spices, the company is
able to commercialize a robust range of tomatobased products.
"Through our contracted tomato grower
relationships, we oversee the entire process, from
planting to harvesting," says Mr. Watkins. "We utilize
steam peelers for maximum efficiency and T.A.S.T.E.
(thermally accelerated short time evaporation)
evaporators for superior tomato flavor and color."
The same is true of its capsicum business. The
company has seed-to-factory operations in the
U.S. and farmgate relationships and programs with
producers in Peru and India. This enables Olam
SVI to offer a broad range of chili varieties and
ingredient forms.
"We have long-term partnerships with all our growers
and invest in their operations," says Mr. Estep. "Our
goal is to reduce our consumption of natural
resources and positively enrich the livelihoods of the
people and communities we impact."
Olam SVI is committed to long-term investment in
the sustainability of its global supply chain. This is the
road it travels to bring product to market.
