Recognizing industry leaders
Lifetime Achievement Award
Dolf DeRovira, President, Flavor Dynamics, Inc.
Dolf DeRovira has always had a passion for education. His love of
science and the culinary arts led him to his career as a flavor
chemist. In the early 70's, he started a flavor company for the
Biddle Sawyer Corporation and then started his own company in the mid-80s called Flavor Dynamics, Inc. in South
Plainfield, NJ. Mr. DeRovira developed many systems for
flavor descriptions, including the flavor of roasted coffee
(The Coffee Cupper's Kit) and overall sensory evaluation (The Dynamic Flavor Profile Method). He currently
holds a joint patent with Monell Chemical Senses Center,
Philadelphia, which uses flavor sensory applications to
assist in the perpetuation of healthier crops.
During his time with RCA, he was the first associate
board member, serving for seven years. Along with Jeffrey
Cousminer, he started the education committee and helped
develop courses at Rutgers and Mercer County Community College
for chefs and the Culinary Institute of America at both Hyde Park and
St. Helena to help train food technologists in culinary techniques. He is
currently co-chairman of the new board development committee.

Thomas W.J. Dickhans, Development Leader of Chef Services,
Hormel Foods Corporate Services, LLC
Chef Thomas W.J. Dickhans has invested his passion for food
into a 40-plus year career in product development roles for El
Torito Restaurants, Chi-Chi's Restaurants and Hormel Foods
Corporation, Austin, Minn. He has a track record of creating products that fill consumers' needs in food service and
retail markets. He innovated industry-leading products for
Hormel Foods, including the Cafe H, Austin Blues and
Fire Braised product lines. He also takes time to share
his knowledge and passion for food across the industry
through customer presentations and industry shows. Chef
Dickhans' ability to make processes "work" the way they
are not "supposed to" is legendary at Hormel Foods.
His passion for food leads him to eagerly take on
challenging projects and deliver the best possible product to
the customer. He is available to help anyone who needs it with
an easygoing demeanor. He pushes his coworkers and development
team to challenge the status quo, question what is possible and always put
the customer first.
