was the plant manager at National Food Holdings' facility in Sioux City, Iowa. The RC-300 was considered novel technology then and the plant used it successfully for five years. Generation two of the machine was later tested at a large beef processing facility in 2014. In both cases, Rollstock made improvements on the machines after getting feedback from operators and other plant personnel. The latest RC-300 was installed recently at a major beef plant in Texas under Petersen's guidance. "I have lived this machine since its beginning," says Petersen, who also spent 21 years with IBP, which was acquired by Tyson in 2001. "The latest version of the machine is much more robust." Indeed. The RC-300 can handle everything from a whole bone-in ham to a halfpack of spareribs. One processor who has used the machine for the past year touted the RC-300 as "a completely different concept." The RC-300 features a water-cooled hold down and continuous temperature sealing element with a heated seal bar. Most rotary chamber machines feature seal bars heated through a wire. "It's always heated, but it's cooled by water around it," says Erik Bauer, Rollstock's Director of Sales and Marketing. Instead of a 3-millimeter wide seal or two 3-millimeter wide seals, the RC-300 features two 7-millimeter wide seals. When the sealing hood goes down, air is evacuated from the bag, and it is sealed with the two 7-millimeter wide seals. "If one seal fails, there is a second seal," Bauer says. Thanks to the benefits provided by the patented heated seal bar, some RC-300 users have seen leak rates decline from as much as 3 percent down to as little as 1 percent. "That's a huge improvement considering the amount of throughput of most large-scale processors," Bauer says. "Our
