Food Safety Course Food Safety Tours the US by bob Gatty T SFA takes its food safety course on the road to better serve members. o help member companies prepare for compliance with the Food Safety Modernization Act (FSMA), the Snack Food Association (SFA) developed a series of oneday workshops being held in several cities across the nation. The workshops are designed to help snack food industry companies prepare and update their food safety and Hazard Analysis & Critical Control Points (HACCP) plans in preparation for the new regulations stemming from FSMA, which are scheduled to be implemented within the coming year. SFA is taking the program on the road to 24 Snack World November 2013 www.sfa.org make participation easier for many companies. The workshop reviews FDA expectations for HACCP programs, including risk analysis, hazard evaluation, preventive control programs and documentation, and how these aspects will affect snack food operations. Exercises are designed so that attendees can work on implementing the new expectations with their own existing or developing HACCP programs, which they should bring to the workshop. The first session was held in Columbus, OH, on Nov. 12. A second session will take place in Baltimore on Jan. 23, 2014. The first course was facilitated by Daniel Lafontaine, PhD, of the HACCP Consulting Group, and Shari Plimpton, PhD, director of industry outreach, Center for Innovative Food Technology and SFA's food science and technology consultant. Cathy Crawford, vice-president of the HACCP Consulting Group, will facilitate the Jan. 23 course.
