up to 300. The 285-room Margaritaville
Beach Resort Grand Cayman, also on
Seven Mile Beach, has had its soft opening
and is expected to be fully functional this
fall, while the new Ironwood Resort in
Grand Cayman will be an Arnold Palmer-
branded golf resort with a PGA course
when it opens next year.
There's also a thriving farm-to-table
movement in the Caymans, with several
restaurants focused on serving up locally
grown ingredients, especially seafood and
organic vegetables. At the Brasserie in
Georgetown, groups of up to 32 can dine
right in the restaurant's on-site organic
garden, while Cayman Cabana offers
a farm-to-fork, sea-to-table family-style
harvest dinner experience on Thursday
nights and can accommodate groups of 40
to 50 people.
On the sister island of Cayman Brac,
a 30-minute flight from Grand Cayman, is
Le Soleil d'Or, a hideaway that is available
for buyout with four oversized hotel suites
and four standalone residences, as well
as a 20-acre organic farm situated atop a
limestone bluff. Here, the chefs grow the
fresh fruit, vegetables and herbs used in its
two restaurants. Groups can enjoy chef-led
cooking classes in this intimate setting.
One of the world's most treasured
celebrations of food and wine, Cayman
Cookout, welcomes an elite roster of
talented chefs and wine and spirit experts
each year. The exclusive, interactive
weekend features cooking demonstrations,
tastings, tours, dinners and pairings all
along Seven Mile Beach. Next year's event,
scheduled for January 10 to 14, will be
hosted by world-renowned chef Eric Ripert
and his friends, including Anthony Bourdain
and Jose Andres.
"Though the Cayman Islands is
renowned for our award-winning beaches
and world-class diving, we also have a thriving
culinary scene and distinct Cayman hospitality,
which is guaranteed to impress groups of all
sizes and needs," says Rosa Harris, director
of tourism for the Cayman Islands.
Groups can dine among the ruins at the
495-room Hilton Rose Hall, located on
the 400-acre historic Rose Hall Plantation.
The resort's Cinnamon Hill Golf Course is
situated on what used to be a large sugar
plantation. One of these homes is the
historic former house of Annie Palmer, who
was called the "White Witch of Rose Hall."

A dramatic setting for events for up

Aqueduct on Rose Hall. In all, the Hilton
Rose Hall has 44,000 sf of indoor and
outdoor event space.
The Hyatt Ziva Rose Hall has cooked
up a variety of culinary experiences that can
be customized for groups. Wooter Tjeeres,
the lead pastry chef and "chocologist,"
hosts chocolate tastings with rum pairings
that tie-in local ingredients. The interactive

of groups, as can cooking classes with Chef
Rickardo featuring authentic dishes such as

Even the spa at Ziva and Zilara Rose Hall
