The Cosmopolitan [ON LOCATION] LAUREL HERMAN Sophisticated venues, a hip soundtrack + stellar cuisine grace the heart of the Las Vegas Strip Less than a year old, The Cosmopolitan of Las Vegas rises high above the glittering Strip with 2,995 oversized rooms and the largest private terraces in the city. Right from the start, this modern resort has promoted itself as a Las Vegas experience for planners who don’t typically look at Las Vegas. There is no “theme” per se to this handsome and confident hotel, which in turn is its theme. The lobby area immediately puts you in the “edge of modern” mood with 12 towering digital columns displaying revolving art that sets the tone for the rest of the hotel. After your attendees wrap up their private check-in, they can proceed either to their room or to the function space without having to pass through the casino. Definitely a nice option. BEYOND THE TRADITIONAL With over 150,000 sf of meeting space on an easily manageable footprint of two adjacent towers, The Cosmopolitan makes it a snap to personalize meetings and events. For example, book receptions at the super cool Pool District, consisting of three separate venues available for private and semi-private buyouts: the Boulevard Pool, Bamboo Pool and Marquee Dayclub Pool. I just love the Boulevard Pool for stadium-style events under the stars, with brilliant views high above the city. My fave space is the Chandelier Bar right when you walk in the door off the Strip. It is so stimulating with over two million crystals hovering over the various lounge areas spread across multiple floors, with semi-private seating for 200. It’s the largest chandelier in North America, where it feels like you’re meeting inside a glass of bubbly! One night, DJ Mia Moretti and electronic violinist Caitlin Moe were rockin’ the house—the two have opened for both Snoop Dog and Katy Perry—but you couldn’t hear a peep in the suite. cosmopolitanlasvegas.com; lvcva.com We highly recommend dinner at Scarpetta. This is chef Scott Conant’s 5th version of his fine dining Italian concept. For small groups up to 16 pax, there’s a glass-enclosed private dining room with more spectacular views of the Strip and the fountain spectacle at neighboring Bellagio. Try the braised short ribs of beef with the faro risotto appetizer, as well as the creamy polenta and roasted sea scallops served with porcini mushrooms and sun chokes. For a main entrée, make sure someone orders the black cod with caramelized fennel and the Colorado lamb loin. For a more casual venue, you’ll like the fun China Poblano restaurant serving chef Jose Andres’ fusion Mexican/Chinese cuisine. OMG!—it’s perfect for groups to share. You can order lots of small plates for tasting an array of dishes, like “The Unruly Monk” with handmade noodles, wild wood ear mushrooms, a poached egg and hot sauce. For down time, The Sahra Spa & Hammam is fashioned around desert motif, creating a lovely serene environment. Over 40 tons of sandstone from local quarries were used to create the walls. The experience begins with an electronic questionnaire that allows each guest to personalize their spa program.
