local supermarket, a 10-minute walk from the lodge, and a small communal kitchen is available for daily cooking. But it’s not all work. Volunteers get about three days a week to explore the desert landscape or head off to Eilat or to Be’er Sheva where they can find routes to other popular Israeli cities, like Jerusalem and Tel Aviv at the larger bus terminal. There’s still other volunteer opportunities at eco-lodges on the scenic southern slopes of Mt. Hermon in the Golan Heights, situated close to Nimrod, a cooperative agricultural community and the highest village in Israel at 3,642 ft. above sea level, located approximately four hours north of Tel Aviv. Here, volunteers can help construct and maintain sustainable buildings, explore experimental bio-farming, take in the awe-inspiring scenery and visit the ancient ruins of Nimrod Fortress, which dates back to the Crusaders era. All of these lodges are all about setting an example of modern sustainable living in areas such as the rugged Golan Heights using down-to-earth techniques such as grey water systems, construction from recycled materials, natural insulation and bio-farming. The focus of many of these programs is in creating a living and working eco-community. Here, volunteers participate in ecologically minded building, daily maintenance of the eco-lodge, bio-farming and picking crops in the spring and autumn or they can do office work such as answering phones and e-mails, host international guests, do website translations or write promotional copy. Participants, in fact, are invited and encouraged to bring their own special skills to the project. The project leaders say there’s plenty of room for innovation, so whether the volunteer’s specialty is a trade skill, web design, yoga, painting, botany, or virtually anything else, there is room at these eco-lodges for them to add their own personal touch to the program. Volunteers usually stay in dorm cabins suited for four people with beds, bathroom with hot shower and fully equipped kitchen with food provided for cooking. In their free time, travelers can visit the ancient ruins of Nimrod Fortress or spend time in national parks in this region that include the Banias Waterfall, Tel Dan Nature Reserve and Mt. Hermon itself, which has skiing from January through March. The mountain villages of Majdal Shams and Mas’ade also offer a unique insight into Druze culture and cuisine. If clients aren’t interested in voluntourism, there are still plenty of opportunities for eco-tourism in the Negev Desert, primarily in desert hospitality houses usually situated in the shadows of ancient acacia trees and made of mud, palm trees and recycled materials built to harmoniously blend in with the natural desert environment, allowing guests to connect with wide open spaces and the surrounding view. These lodges usually include guesthouse huts in various sizes for backpackers, couples, families and groups. Each hut typically includes a shaded balcony with hammocks. In addition, a large central sitting area is offered to guests, where they can meet together for meals by the fire with coffee and sweet herbal tea. At night the area is illuminated by lights powered by solar panels and fuel lamps. Rates in these hospitality houses are usually minimal and some have family facilities. Green enthusiasts should not miss Amirim, a vegetarian and vegan village, in the Galilee, established in 1958. Here, a committed group of self-styled “nature freaks” settled on a rocky and exposed area, dwelling in small, standard structures. Today, however, after years of hard labor, patience and more than a little investment, the village boasts more of a European appearance with homes built to blend into the thick woods, with stone terraced yards, scenic gardens and vacation units. But the people of Amirim still live a natural vegetarian/vegan lifestyle, bbqs are not allowed and there are no meat products, including fish and fowl.
