Polly Spodey's Orange Cake

I

n the late fifties, we were in one of the South American countries. I think Venezuela, but don't quote me on that. Our
next door neighbors were Bill and Polly Spodey. He worked for Shell Oil and she sunbathed and baked. It was during
a sunbathing episode that my mother and Mrs. Spodey met and became fast friends. Mrs. S was so fond of my mother
that she shared this much-prized recipe and swore her to secrecy forever. It was never given out to anyone,but when Mom
died, I found it with her other recipes and decided to start sharing among close friends. As everyone in UFDC is a friend, I
share with you. Follow the recipe exactly (NO substitutions) and you will amaze everyone who samples it.

Polly Spodey's Orange Cake
	 I	 cup sweet (unsalted)
butter, softened
	2	 cups sugar
	5	 large eggs
	½	 teaspoon vanilla
	2	 tablespoons grated
orange rind

	3	 cups cake flour
(I like Softasilk)
	3	 teaspoons baking
powder
	¼	 teaspoon salt
	¾	cup whole milk

Glaze
¼ cup butter

/ 3 cup sugar
1
/ 3 cup freshly squeezed orange juice
Preheat oven to 350 degrees. To prepare cake,
cream butter and sugar together until light and
fluffy. Beat in the eggs, one at a time, very well.
Beat in vanilla and orange rind. Sift together the
flour, baking powder and salt, and add to the
batter alternatively with the milk, ending with the
flour mixture. Spoon into greased and floured (I
use Baker's Joy or Pam's baking mixture.) 10-inch
tube pan. Bake 1 hour until done. Cool in pan on
a rack for two minutes. Heat the glaze ingredients
in a small pan until the sugar just dissolves. Pour
hot glaze over the hot cake. Allow cake to cool
thoroughly in pan before removing.
