Chef

Silver service

Chefs prepare food in restaurants, pubs, hotels and cafeterias. You may also
create menus and control stock. With experience you can become a section
chef, sous chef or head chef, or move into training or management.
What skills and qualifications do I need? You can enter the
profession through an accredited diploma course, apprenticeship or
on-the-job training. You need to be physically fit, since the work is

a maître d' and adhere to strict etiquette.
What skills and qualifications do I
need? Silver-service staff may be trained
on the job or sent on a course. You can also
apply for a course independently. Waiting
experience is valuable and good people
skills are essential. You need the ability to
work well under pressure, and look smart.
How much can I earn? Staff earn £8
to £10 an hour, and hours are variable. A
maître d' can earn up to £17,000 a year.

Many people start at the bottom
of the ladder and work their
way up to managerial roles
demanding, and you must be able to stay calm under pressure. Good
organisational skills are also important, as is knowledge of health and
safety rules, hygiene practices and allergens.
How much can I earn? Salaries start at £13,000 for trainees, and can
rise to £50,000 for head chefs.

Fast food restaurant manager
There's definitely more to fast food than flipping burgers. Fast food
restaurant managers take responsibility for an outlet, including
planning, training, staff motivation, finance management and, of course,
customer satisfaction. You can work your way up to be in charge of every
restaurant in a group or region.
What skills and qualifications do I need? There are lots of ways into
restaurant management, from graduate training schemes to starting in
the kitchen. You don't need a degree, although college diplomas in
hospitality are useful, and a food hygiene certificate will be required
somewhere along the line. You'll also need to demonstrate leadership
and business management skills, as well as the ability to work well with
and motivate others.
How much can I earn? As a manager in training you'll start on a salary
of around £18,000, which can rise to £32,000 when you're fully trained.
Area managers can pull in £45,000 or more, and if you work for a big
chain of restaurants such as McDonald's there may be lucrative and
rewarding corporate opportunities too.

Catering manager
You'll oversee the provision of food in
an institution such as a hotel, hospital,
factory or school, or a service that delivers
meals. You'll plan menus, manage budgets
and stock, recruit staff, organise rotas
and ensure staff work to regulations. An
important part of the job is monitoring
the quality of service to customers.
What skills and qualifications do
I need? A catering or hospitality
qualification is helpful but not essential
- many people start in a junior role
and work their way up. Experience in
a professional kitchen will help. You'll
need good English and maths, plus
organisational and communication skills.
How much can I earn? Salaries
start at £19,000, rising to £40,000
for an experienced manager.
