Potatoes on 83% of foodservice menus

in 2018 exceeded
$800 billion.
With restaurants
competing for
staffing, skilled labor,
customers and highquality
ingredients to
gain a competitive
edge, it's an exciting time for the foodservice
industry and those who supply it.
Potatoes are big business for foodservice.
In fact, the foodservice industry sliced, diced,
mashed and roasted 12.3 billion pounds of
potatoes in 2018 - a value of $8.1 billion -
according to Technomic. Potatoes are one of
the largest food categories sold in foodservice,
and consistently rank among the top dishes.

POTATOES USA SEEKING BOARD NOMINEES
Potatoes USA is seeking nominees for
73 open board seats for the 2020-23 term.
There are openings for 37 states, as well as
one for importers.
Board members act as a link to their
respective farming communities and the

WHICH FORMS ARE SOLD AT
FOODSERVICE?
Frozen potatoes represent the largest
share of potatoes at 59%, followed by fresh
potatoes at 33% and chips, dehydrated
and refrigerated potatoes at 3% apiece.
Within frozen potatoes, fries represent
79%, followed by drums/shaped potatoes at
6%. Whole fresh potato sales are just over
four billion pounds with roasted potatoes
representing the top preparation method at
26% followed closely by mashed and baked
potatoes at 22% and 21%, respectively.
Mashed potatoes represent the majority
share of dehydrated potatoes (58%),
followed by loose hash browns at 32%.
For refrigerated potatoes, other breakfast
potatoes at 28% and mashed at 26%
represent the main types.

In addition to strong sales, potato menu
penetration is strong. Potatoes are on 83.2%

MENUS?
Loaded drums, poutine, potato drums,
hand-cut fries, crinkle cut fries, potato rolls
and loaded fries. In fact, over the past four
years all of these menu items have grown
more than 50% in popularity. Interestingly,
gluten-free and vegan are also trending as
special diet callouts on menus.

most frequently found on fine dining (91%),
casual dining (89.4%) and mid-scale (85.5%)
of restaurant menus. While potatoes are
popular throughout the day, they are most
commonly offered on breakfast, all day and
dinner menus. Potatoes are most often
found on American menus in combo entrees,
such as breakfast plates or BBQ platters.

POPULAR POTATO DISHES
AT FOODSERVICE?
It comes as no surprise that fries top the
list, appearing on 69.1% of all menus. There
are a plethora of loaded fry options trending
that showcase global flavors, particularly
Mexican. In addition to fries, mashed
potatoes, potato salads, hash browns and
baked potatoes are the next most popular
potato dishes on U.S. menus.
