with a number of dynamic chefs to keep Fork's menu and concept
fresh; since bringing Chef Eli Kulp to Philadelphia in late 2012 (Kulp
is Yin's business partner in High Street Hospitality Group), Yin has
expanded her family of restaurants to include more top locations.
During the worst of the pandemic, the restaurant was sustained
by the efforts of the High Street bakery, responding to a high demand
for bread early in the pandemic, Yin said. The restaurant partnered
with Fuel the Fight Philly to deliver meals to 12,000 front-line
health care personnel to University of Pennsylvania and Jefferson
Health systems.
Yin, who has owned Fork since 1997, keeps the safety of her
workers and clients at the forefront. The tables are at least six feet
apart and workers wear masks and shields. They are mandated to
wash their hands regularly and hand sanitizer is readily available.
Before they begin work, body temperatures are taken to be certain
the staff is safe to work.

Worry is 'nerve-wracking'
For Fork Restaurant owner Ellen Yin, worrying about the health
of wait staff and customers has been " nerve-wracking, " she said.
But her restaurant, at 306 Market St., Philadelphia, recently
built outside seating the customers seem happy about, with in-place
protocols to keep everyone safe. Yin operates some of the country's
most celebrated dining establishments, including a.kitchen+bar, Fork,
High Street Philly, High Street Provisions in Philadelphia and High
Street on Hudson in Manhattan. Over the years, she has partnered

Prior to the pandemic, Yin said, seating was 25 tables plus a private
room for 40 people. After the pandemic, she said, the restaurant
could seat 12 tables plus outside.
Full-time staff numbered 90 pre-pandemic, Yin said, and is down
to 15 full-time since the pandemic's start.
The challenge to Yin and Fork is for customers who enter without
a mask. They must wear one to eat at the restaurant.
Yin noted she knows of no outbreaks of COVID-19 because of
restaurants in Philadelphia or other major cities. Nonetheless, they
will follow pandemic protocols.
