Provisioning
Anchor down. A few snacks. A cold island beverage. Prepare
dinner.
Proper and adequate provisioning is critical for a successful
charter. Although there are many places to eat ashore (and you
should eat ashore) there is just something about sitting down to
a simple, but tasty meal onboard your boat.
Having taught sailing and chartering for over four

decades, I have seen some impressive provisioning, as well as
incredible waste of money and food. Charters companies do
not usually provide anything for the galley. The reason is
simple. Food safety.
Many charter companies do offer some sort of provisioning
option and do a good job of it. After all, if you don't like the food
they supply, you may not re-book with them. Whether you order
frozen main meals through the charter company or you invest
the time to do you own shopping, planning is the key. In the
early days of chartering, we used the thaw method of meal planning. In the morning, you opened the ice box and whatever had
thawed overnight was on the dinner menu. With excellent
refrigeration on charter boats, planning is easier.
Work back from the primary protein - beef, chicken, fish or
your vegan option. Add a few sides of seasonal produce or salad
and then select a few herbs and spices that will complement
your protein choices. If you want an island flavour to prevail in
your meals, choose coconut oil rather than olive or vegetable
oils. Picking up panko (Japanese style dry bread crumbs) and
shredded coconut will allow you to prepare simple coconut
shrimp or fish for tacos. One online source I go back to again
and again is Carolyn Shearlock's TheBoatGalley.com. I use
Carolyn's provisioning Excel spreadsheet (modified for my own
use) to plan all of my cruising vacations - whether chartering or
