Ice became increasingly popular in
American drinking culture in the 19th
century, more so than in European
countries. Big cities like New Orleans,
San Francisco and New York City
received shipments of ice, which may
have influenced the cocktails invented
there. The majority of recipes in the
groundbreaking 1862 cocktail recipe
book, " The Bar-Tender's Guide " by Jerry
Thomas, called for ice.
In 1922, the modern blender was
patented. The small appliance began to
rise in popularity with the introduction
of the Waring " Miracle Mixer " in 1937.
The device was promoted at the National
Restaurant Show as a bartender's aid.
Bandleader Rudy Valle became a fan
and champion of the blender when he
saw how fast and easy it was to make a
frozen cocktail.
The introduction of this efficient new
tool coincided with the rise of tiki drinks,
popularized by Don the Beachcomber
restaurants' tropical cocktails.
Farther south, the owner and bartender
at Havana's El Floridita, Constantino
Ribalaigua Vert, used a blender
to transform Cuba's already popular
Daiquiri made with lime, sugar and rum.
The frozen Daiquiri's delicious taste
and its connotation with exotic tropical
climates soon expanded its popularity
beyond the island.

▶ ½ OZ COCONUT RUM

electric blender and blend until the
consistency is slushy. Pour into a tall

Colada was conceived. Two Puerto Rican
restaurants claim to have concocted the
creamy frozen cocktail we know today, a
delectable blend of white rum, coconut
cream and pineapple juice. Although
the Daiquiri and other frozen cocktails
started off as chilled but not frozen,
the Piña Colada began life in a blender.
According to the Caribe Hilton hotel,
one of their bartenders, Ramón " Monchito "
Marrero, perfected the Piña Colada
in 1954, serving it at the Caribe Hilton
bar for 35 years. Barrachina Restaurant
in San Juan's Old City also claims parentage,
through their accomplished Spanish
bartender, Ramon Portas Mingot.
On July 10, 1978, Puerto Rico proclaimed
the cocktail its national drink.
Now, the rest of us can celebrate National
Piña Colada Day on July 10, too.
According to the Diageo Bar Academy,
the first recorded recipe for a frozen

The classic Margarita can easily be made
into an icy treat to beat the heat.

▶ 3 OZ TEQUILA
▶ 1 OZ TRIPLE SEC (COINTREAU OR
OTHER ORANGE LIQUEUR)
▶ 2 OZ FRESHLY SQUEEZED LIME
JUICE
▶ 8 OZ CRUSHED ICE
▶ LIME SLICE
Place salt in a saucer. Rub rim of
a margarita glass with lime slice
and dip glass into salt to coat rim
thoroughly, reserve lime. Pour
tequila, triple sec, lime juice and ice
into a blender. Blend well at high
speed. Pour into a Margarita glass.
Garnish.
