▶ BAR SPOON OF DEMERARA SUGAR
OR A SUGAR CUBE
▶ 1 OZ BELLE ISLE HONEY
HABANERO (35% ABV)
▶ 1 OZ RYE WHISKEY
▶ 3 DROPS PEYCHAUD'S BITTERS
▶ 1 DROP ANGOSTURA BITTERS
▶ 4 TO 5 DROPS ABSINTHE
Muddle a sugar cube with a few drops
of water in a mixing glass. Add Belle
Isle, rye, bitters and ice to the glass
and stir well. In a chilled rocks glass,
roll a few drops of absinthe inside until
thoroughly coated. Pour off the excess.
Strain the contents of the mixing glass
into the absinthe-lined glass. Garnish
with a lemon twist.
▶ 2 LEMONS FOR ¾ OZ BBQ'D LEMON
JUICE
▶ 2-3 DASHES OF TABASCO ORIGINAL
RED SAUCE
▶ 1 OZ GIN
▶ ½ OZ SUGAR SYRUP
▶ 1 ¾ TO 2 ½ OZ SWEET SPARKLING
WINE, CAVA OR PROSECCO
▶ 1 LENGTH OF BBQ'D LEMON PEEL
FOR GARNISH
Make BBQ'd lemon juice: Cut the lemons
in half and grill flesh side down on your
BBQ until they begin to char. If your BBQ
has a lid, close it, as this will allow the
lemons to smoke and take on even more
flavor. When lightly charred, remove
the lemons and allow to cool. Juice as
normal.
Make the BBQ'd lemon peel: Gently
char a length of lemon peel on the BBQ.
When the peel has cooled, shape it into
a twist with your hands over the cocktail
and rest on the rim of the glass.
Make the cocktail: Combine the gin, ¾
oz. of BBQ'd lemon juice, sugar syrup
and Tabasco into a cocktail shaker.
Cover and shake for 10 seconds. Strain
into a Champagne flute or coupe glass,
and top with sparkling wine.
Tip: To make a pitcher of this cocktail,
multiply the recipe by six.
