BALSAMIC FIG
CHICKEN MARSALA
INGREDIENTS
4 boneless, skinless chicken
breasts, cut in half lengthwise
Sea salt & cracked black pepper
8-10 ounces button mushrooms, sliced
1⁄4 cup Oliveto Garlic Olive Oil
1⁄3 cup flour
1⁄3 cup chicken stock
2⁄3 cup Marsala wine
3 tbsp. Oliveto Fig Dark Balsamic Vinegar
2 tbsp. chopped parsley

INSTRUCTIONS
Season the chicken with sea salt & pepper. In a pie plate, or shallow dish,
add the flour & season with sea salt & pepper. Dredge the chicken breasts
in the flour mixture & set aside. Heat the Oliveto Garlic Olive Oil in a large
skillet over medium-high heat & saute the chicken until nicely browned on
both sides, for about 3 minutes per side.
Remove chicken from pan & set aside. Add mushrooms & saute for 3 minutes.
Add the Oliveto Fig Dark Balsamic Vinegar & chicken broth to the pan.
Nestle the chicken breasts in the sauce. Cook over medium-low heat for 10
minutes, turning occasionally. Garnish with fresh parsley & serve over wide
egg noodles or mashed potatoes.
