Yet we must watch a lot more than
formats; it's also new service providers.
Think about how Lyft and Uber have
changed the taxi industry with Internetbased services geared to the changing
consumer. We face similar challenges in
food, whether it comes from services like
Blue Apron, providing the ingredients to
simplify and embellish meal preparation,
or the countless services now delivering
ready-to-eat meals.
As always, those changes are
motivated by consumer needs and

wants, starting with the desire for ever
more convenient options. Increasingly
consumers can simply order food by
talking to devices in their homes, or
they can fulfill all or part of their regular
shopping trips in much the same way.
But simplicity alone won't carry the day.
Shoppers want solutions to problems
and needs, which is why some are
willing to pay extra for services like
Blue Apron that allow them to assemble
interesting recipes at home. Retailers
and manufacturers, having worked for

years to make meal preparation easier
and more interesting, have a new level
to reach.
Of course, not all shoppers are the
same. As current population statistics
make clear, the U.S. is becoming more
polarized in terms of income. The
middle class is shrinking, while the
percentages in the upper and lower
classes are both growing. That creates
an additional problem for an industry
historically focused on serving all
consumer needs.
More than ever, companies need to
understand both who their shoppers
are and what motivates their shopping
decisions, knowing there are no simple
answers. For instance, shoppers
struggling economically still crave
solutions to make their lives easier,
just on a budget. That might explain
why the new Lidl stores focus on fresh
products and solutions, even as the
company's emphasis is firmly on price.

and Frozen Food Industry!

Likewise, it will be interesting to
watch whether the Amazon/Whole
Foods deal results in an enhanced
supply chain that helps dispel
the mocking nickname of "whole
paycheck" forever, while giving
the ecommerce giant powerful
capabilities in fresh foods.
This much is certain: Change is
happening, and it impacts all sectors
of the business. These types of new
players and the commitment they are
making means retailers and supplier
partners need to collaborate better
than ever to remain relevant and
successful in the new market.

state of the industry need ignore the
results of the past year and consider
the possibilities of the future. The
challenges are enormous-maybe
larger and more frightening than ever,
but they must be faced.
That is what changing conditions
always demand. To paraphrase an old
movie, buckle up. It's going to be a
long battle. ■
