Meal Kits by the Numbers
A March 2017 study from Nielsen, "The Mindset of the Meal Kit Consumer,"
painted an interesting picture of the meal kit delivery industry, revealing that:

One in four adults had purchased a meal kit - for delivery or in-store -
during the previous year.
70 percent of those initial purchasers continued to buy them.
Millennials and Gen Xers are much bigger consumers of meal kits, being
300 percent more likely to buy them than people born before 1965.
Men are 40 percent more likely to purchase meal kits than women.

and customers can pick anytime from
hundreds of recipes.) All strive to get
their products to the consumer within
24-48 hours. The boxes come packed
will all the ingredients needed for the
meal, plus step-by-step instructions on
how to prepare and cook the meal.
Keeping it fresh
Smooth logistics operations are critical
for meal kit companies, which must
bring in fresh products (particularly
produce) into their fulfillment centers,

put the kits together and then send
the boxes out the door as quickly as
possible. That means getting the right
produce to arrive at the right time.
"I think the largest challenge is
stabilizing the supply chain with our
vendors," said Tai Dang, logistics
director at Martha & Marley Spoon.
"It's not that difficult to get it in house,
but it does take a bit of work to get the
correct levels in house."
Chef'd sources locally on both coasts,
but the vast majority of the produce

it uses comes from Ventura and
Oxnard counties. "It is literally almost
as fresh as you can get, because
it's being picked one day and then
packaged and shipped to us the next
day. We turn the produce around very
quickly," said Ben Stickney, senior
vice president of operations at Chef'd.
"We receive two trucks a day on both
coasts from our top suppliers." They
do source some foods directly from
growers, but most come through
distributors.
Although distributors currently handle
the inbound logistics operations, "we
are always open to exploring ways to
get items here quicker, even if that
means that one day we are sending
the transportation out to the fields to
get produce," said Stickney.
The most important thing in their
logistics operation is to maintain the
cold chain for the produce. "That's
something that we check on every
inbound truck - is the truck at the
right temperature, is the actual
