The
type
of fruit that
you can use is
almost
unlimited. Nectarines,
peaches and plums are all
excellent. Most berries will work as
well. Freezer jam can be used in dozens of differ- ence ways. It can, of course be spread on
bread or used as a sauce with dessert. Certo provides free
recipes with each package.
Freezer jam always makes me think of breakfast, probably because that is where I use it most. My favorite breakfast is French toast and strawberry freezer jam. I once
ordered French toast in a restaurant in Germany and liked
it so much that I bribed the waiter to print out the recipe for me, though it is not so much a recipe as a set of
procedures.
Begin by putting a handful of Bran flakes on a square
of wax paper. Crush the cereal with a rolling pin and add
a couple of tablespoons of brown sugar. Set aside for later
use. Beat a couple of eggs and add a teaspoon of vanilla,
a couple of tablespoons of milk and two tablespoons of
sugar or Splenda. Soak a couple of thick slices of French
bread in the mixture and let stand until the bread is thoroughly soaked. Take the white of an egg and beat it.
Holding the bread carefully so that it doesn't tear, dip the
bread in the egg white and then roll it in the bran flake
mixture. Place in a frying pan and cook until brown but not
burned. Serve with strawberry freezer jam. Fortunately, it
is difficult to damage this recipe, so go ahead and try it.

ams and jellies
have traditionally
been the secret lore
of women. Mothers taught daughters their
secret recipes and ladies aid magazines published
theses secret recipes in special recipe books, often hand
decorated and lovingly preserved. But new technologies
caught up with the women's organization as they did
with everything else. And one of the new technologies
that altered the lives of women was the arrival of freezers, and with them, the arrival of freezer jam. As with any
other technical breakthrough, freezer jam arrived with
the promise of ease and simplicity, but before long new
and different methods arose and new recipes arrived
until now there are entire books devoted to freezer jam.
Google "Freezer Jam," and you will have enough work to
last you for several months.
It began simply enough as the recognition that there
might be simpler way to preserve jellies than boiling berries for a long time, to make a juice that needed to have
pectin added to it, then poured into sterilized bottles.
These in turn had to be cooked in a hot bath, sealed with
wax and stored for long enough to be sure that they had
sealed. The whole operation required enormous patience,
and enough care to ensure that you did not pour hot juice
or wax onto hands and fingers.
And then came freezer jam. Although not immediately.
Most people had freezers that were part of their refrigerators, and freezer jam took up too much space. As more
people bought stand-alone refrigerators, freezer jams and
jellies became more popular. They also tasted fresher and
more natural than the older jams and they were easier to
make. Just crush a couple of cups of fresh strawberries,
together with four cups of sugar and let stand for about
ten or fifteen minutes. While you wait, add the package of
freezer pectin to the water and boil for one minute.
You will need several small containers. These can be
either plastic or glass. Pour the hot syrup into the containers up to about a half inch from the top. Cover and let
stand for 24 hours, then freeze. The very same recipe can
be used for raspberry jam. Once you have made the jam,
it will last for one year in the refrigerator. After the jam has
been opened it must be used within three weeks or it is
likely to go moldy. For that reason, it is best to use fairly
small containers. Some people like to add a couple of teaspoons of lemon juice to the syrup with which you begin,
but it doesn't seem to make much difference.
