AS A TOP-TIER UNIVERSITY WITH A GROWING CAMPUS AND STUDENT
POPULATION, ENSURING THE CAMPUS COMMUNITY HAD ACCESS TO
NECESSARY DINING RESOURCES WAS AN IMPORTANT CONSIDERATION FOR
CAMPUS SERVICES AND UTSA DINING, THE OFFICE RESPONSIBLE FOR DAY-TO-DAY
OPERATION OF DINING LOCATIONS ON CAMPUS.

"I saw a need from my fellow students for different food options on campus," said Kenney.
"I knew it would be hard to find physical space
for new food locations, so a food truck seemed
like an easy solution for additional dining."
UTSA agreed.
As a top-tier university with a growing campus and student population, ensuring the campus community had access to necessary dining
resources was an important consideration for
Campus Services and UTSA Dining, the office
responsible for day-to-day operation of dining
locations on campus. With limited building
space, the idea of a mobile dining facility was
viewed as a great way to implement new dining
options at UTSA. With everyone on board, the
truck quickly received a green light and the
Request for Proposals hit the street. Kenney
served as the student representative on the
vendor selection committee, working together
with staff and administration to identify the
vendor that would best meet UTSA's needs.
Once a vendor and a truck were selected,
UTSA Campus Services planned initial marketing, including the appearance of the truck. The
goal was to embody UTSA branding, making
the truck instantly recognizable around campus to help create a buzz and a following. To
continue the partnership, Campus Services
developed and presented two separate
designs to SGA and the UTSA community as
a whole for a vote. Students and employees
participated in the voting process, choosing
between Rowdy Curbside, a more urban, "hipster" design, and Rollin' Rowdy, which offered
a modern, sporty vibe. Both names referred
back to Rowdy the Roadrunner, the UTSA
mascot. Although voting was extremely close
throughout the process, Rowdy Curbside was
ultimately triumphant.
"The design fit the spirit of UTSA," said
Kenney, referring to the use of bold UTSA
colors and imagery in Rowdy Curbside's
appearance.

Sara Flores, communications specialist
for Campus Services, created the design for
Rowdy Curbside. Flores drew inspiration from
the urban kitchen design trend popular with
restaurants and food trucks, using minimalist themes that incorporate a mix of organic
and industrial materials, such as wood grain
texture, string lights, and visible hardware.
"This trend is associated with unique and
freshly prepared food that isn't limited to a
specific region or dining genre," said Flores,
"something that made the design perfect for
the truck's rotating menus."
UTSA Dining worked to produce a variety
of menus for Rowdy Curbside that rotate
weekly. Each menu was developed from
customer feedback, incorporating both new
offerings and customer favorites, such as
cheeseburgers and Tex Mex cuisine. To continue the partnership with UTSA's student
body, UTSA Dining solicited feedback during
Rowdy Curbside's first few months of operation. Based on suggestions, Rowdy Curbside
debuted three new menus in the spring 2017
semester, offering Middle Eastern, Asian and
Indian dishes.
As with any food truck, the intent with
Rowdy Curbside was to keep it on the move,
relocating to different sites throughout the
week. In determining where to park the truck
each day, Campus Services and UTSA Dining
considered student enrollment, peak times on
campus and areas that saw high pedestrian
traffic. In each of its various locations, Rowdy
Curbside provided a unique and contemporary dining atmosphere, different from food
courts or standard retail dining locations.
Flores' design purposefully encouraged that
environment.
" The name Rowdy Curbside mentally
invokes the idea of an outdoor urban eatery," said Flores. "I wanted to create a sense
of dining on a picnic table underneath string
lights while enjoying the community. Overall,

my goal was to keep the look of Rowdy Curbside
interesting enough to be eye-catching, but
not cluttered."
As Rowdy Curbside finished out its freshman year serving UTSA, the truck proved a
welcome addition to campus. The teamwork
between various campus departments and
the support and initiative shown by UTSA's
students are reflected in the success of the
food truck. With Rowdy Curbside ready to roll
into its second year of operations, Campus
Services remains committed to creating new
and innovative ways to enhance the campus
experience.
