NC Pork Report - Summer 2017 - 17

"We won four events last year, and
I had seven second-place finishes," he
said. "We keep up with the points so
you know where someone else it sitting.
[Winning the title] was kind of overwhelming. To be the second Pitmaster of
the Year to follow up Charlie Meeks, it's
humbling because you know how hard
everybody works. They work like crazy."

IT DID NOT COME EASY
Fineran, who turns 55 in October, joined
the Air Force out of high school. He spent
two years in Germany and the last two
years stateside at Shaw Air Force Base
in Sumter, South Carolina.
From defending his nation he went to
protecting his North Myrtle Beach community as a police officer for more than
two decades before stepping away. But
please don't call him retired.
There is the hog competition and his
"other" job in the flooring business. He
has been cooking pigs since he was 25
but did not start competing until four
years ago.
He first got interested when a friend
grilled him a pig for his 25th birthday. He
bought an old cooker and started doing a
few pigs a year. Competition came much
later in life. His brother-in-law, Steve
Sumner, asked him to cook in a competition at a N.C. State spring football game.
"We went up there, and I thought I was
going to show somebody something,"
he chuckled.
They finished "dead last."
He vowed it wouldn't happen again.
But it did.
"My first year, we only cooked in three
events and I finished last place in all
three events," Fineran said. "There is
a big difference in cooking in a competition than in cooking a pig for your
friends. The criteria that the North
Carolina Pork Council has set is crazy
strict on brownness, on the crispness of
skin, the moisture, your meat and sauce
taste. It's one of the hardest things I have
had to do to be successful."
But he got advice, studied the craft of
the masters, and he has actually won
the prestigious Newport event for two
straight years.
"There were 77 cooks in 2016, and this
year there were 65," Fineran said. "Crazy.
How does that happen? It's humbling
