Feature NCPC Sponsors Professional Hot Foods Competition Educational Seminar also on Menu at ACF Chapter Meeting O n October 13 and 14, NCPC was proud to represent North Carolina's pork producers at the Annual Meeting and Awards Banquet for the American Culinary Federation-North Carolina Chapter (ACF NC). ACF NC is a membership organization for chefs from all types of venues, which include everything from fine dining to hospitals. For their 2013 ACF NC Chapter Fall Meeting, NCPC was invited to sponsor the professional hot foods competition that featured pork as the primary component. As part of our sponsorship, we also requested the opportunity to provide an educational seminar to the chef attendees in an effort to better position pork as a primary entree item on their menus. The National Pork Board (NPB) supported NCPC's participation by providing a panel of speakers for the seminar. The panel included: * David Bottagaro, a former chef who is currently the national foodservice marketing manager for NPB * Angela Anderson, the manager of Food Chain Outreach at NPB * Bo Stone, a NC pork producer who is currently serving as one of the Faces of Farming & Ranching for the U.S. Farmers and Ranchers Alliance * Dr. Mark Knauer, assistant professor and extension swine specialist at NC State University The panelists provided a brief overview of the pork industry from each of their unique perspectives, but the primary part of the seminar was focused on questions posed to the panel by the chefs. It was a valuable and unique opportunity to provide the chefs with the knowledge that will empower them to comfortably serve pork in their restaurants. ACF North Carolina provides accredited educational programs, certification, competitions and networking designed to enhance professional growth for all current and future chefs and professional culinarians.
