who have "significant or severe responses to certain foods. . . . which may
include difficulty swallowing and breathing, asthma, or anaphylactic shock." As
Spigler explains, this decision marked a critical turning point. "Prior to 2012,
there was a huge knowledge gap that food allergies may qualify as a disability.
The Lesley case put such a scare into the higher education community that
people stood up and took notice. Now the knowledge gaps have shifted and
depend on where you are and what area you work in."

Lisa Eberhart, who has worked for 20 years as a registered dietician in dining
services at North Carolina State University in Raleigh, aims for transparency in
all of her dining units. "Students are demanding total transparency, and not just
students with food allergies. Five years ago I decided to take every ingredient
for every dish on campus and make a database so we know exactly what we're
serving. If one of the listed ingredients is tomato sauce, we've broken that down
into all of its components. Students can get a list of all ingredients for every dish.
They can also use our iPad to sort by the allergens and see what's safe for them
