like TCU and the University of Prince
Edward Island (UPEI) in Charlottetown
in Canada stock their kitchens with
pots, pans, cookie sheets, cooking
utensils, lockable cabinets, and even
cleaning supplies so that students can
help custodial staff keep the area clean.
Input for the design of these spaces
comes not only from housing staff
and architects but also from students
and faculty. During the process of
designing living-learning communities
at Virginia Commonwealth University
(VCU) in Richmond, students, staff,
and faculty were consulted about
how kitchen design could enhance
living-learning activities. At UPEI,
an important part of the stakeholder
feedback came from the custodial
staff, who were able to offer their
unique expertise in maintenance
and upkeep and in making the space
more sustainable for the community.
"If you have done your job building
trusted and respected relationships
with your custodial staff, their input on
renovation and improvements projects
will always produce positive results,"
says Kelton Thomason, manager of
resident services. "Specifically we had
discussions about the cabinetry (i.e.,
open shelving vs. closed) and storage,
and we talked about signage - and
about what rules/information would
help them in their job and relationship
with students." The greatest challenge
in all this variation is for institutional
designers and architects to ascertain
which kitchen style and amenities
are best for the populations they are
serving. This requires both entities to
engage in dialogue with a variety of
students, residence life and housing
operations professionals, and custodial
and campus services staff. Finding
the right kitchen fit for a residence
hall is key for the space being a
successful community-building and
programmatic tool.

Pam Schreiber, director of housing
and food services at the University of
Washington, sees the kitchen as the
heart of the hall and places it front
and center: "Whereas residence hall
kitchens were often in ground floor

off the main lobby, we believe the hall
kitchen should instead be the 'heart
of the home' just like in our family
homes. Food is truly a universal
language, and both the love of food

the discovery of different foods brings
people together." It is this concept
that residence hall designers use to
guide their intentional creation of
residence hall kitchens. These spaces
allow for multiple public and private
events pulling from very different
student demographics. The most
successful programs exist because the
kitchen is designed for more inclusive
opportunities for interaction around
a common social construct, food.
