in spaces that allow for instruction,
collaboration, and social cohesion -
oftentimes connecting students, staff,
and faculty.
Kitchens also give residents access
to homemade pieces of their identities
when it comes to preparing and baking
their favorite entrée, casserole, or
dessert. This is particularly salient
to international students and those
attending institutions that may be quite
a distance from their home. These
students may not be able to find the
comforts of home-cooked food in the
dining facility, but they can create a
taste of home and strengthen their
connection to the community in the
process. Easily accessible kitchens
also resonate with students who
have special dietary requirements
and need to be able to prepare food
with specific ingredients and in a
particular way. Kitchen spaces can also

The University of Washington allows
students to purchase semi-prepared
meals or raw ingredients for meals,
so that they can prepare a meal for
themselves or for and with others.
As Schreiber notes, "It offers a
different option for dining, especially
if students want to change things up
a bit." Meal plans give students ease,
convenience, and the opportunity for
dining on demand, while residential
kitchens allow them to create their own
food experience. Acadia University
in Wolfville, Nova Scotia, Canada,
offers an interesting hybrid - an open
kitchen with pantry items in the dining
hall - which combines the ease and
convenience of a meal plan with the
intentionality and comforts of being in

One of the major challenges with
communal kitchens is keeping them
clean and safe. Strange smells, dirty
fridges, ovens left on are all side effects
of a well-used kitchen. Though the
space can be a great classroom for a
number of different programmatic
outcomes, the community can be
divided if the space isn't clean, if
materials are mistreated or stolen,
and if poor venting cannot eliminate
cooking smells. Appliances can be
misused, cleaning can be inadequate,
and fire safety procedures can be
ignored. Tens of thousands of dollars
of damage can result from leaving a
pizza box in an oven to keep it warm
or trying to reproduce grandma's
recipe. In the last three years at Oxford
College, there were three small fires
in their apartment kitchens. Even so,
