Cured & Whey (curedandwhey.com) offers
on-site classes, demos, and tastings for
groups as large as 20. Class topics for 2020
include Spanish cheese and wine, summer
rosé pairings, and holiday cheese-board
building. Groups can also customize their
own private events in the shop or take
a warehouse tour with highlights such
as a 350-pound wheel of cheese. Off-site

Get Away
There's more to Las Vegas than the
bustling Strip. Here are some new
spots to explore.
Open since February 2019 at the World Market
Center, Eat chef and owner Natalie Young's newest
restaurant, Old Soul, is filled with antique tables,
mismatched china, and other eclectic touches. The
5,000-square-foot venue, which Young describes
as a "pre-Prohibition" restaurant, serves elevated
American comfort food and classic cocktails that
emphasize bourbon and whiskey. Old Soul has 120

These two-in-one nightspots double as a comedy club, a record store-
and even a barbershop.
1 Barbershop Cuts & Cocktails, a barbershop
and speakeasy, opened in the former Bond space
at the Cosmopolitan of Las Vegas in March 2019.
Guests can sip classic cocktails while they get
a haircut or a shave at the Prohibition-inspired
venue, which was designed by Celano Design
Studio and Marnell Companies. For events, the
1,900-square-foot venue holds as many as 130
people standing and is available for full buyouts.
The venue is helmed by Clique Hospitality
founder Andy Masi, along with Ryan Labbe

IceBar opened at the LINQ Promenade in
December 2019 from the owners of Minus5
Ice Experience. The 1,200-square-foot venue is
constructed from almost 100 tons of ice, and kept
at 23 degrees Fahrenheit; highlights include a 10by 10-foot operational bar serving frosty cocktails,
plus an interactive Vegas Golden Knights hockey
vignette, a statue of Evel Knievel, and 12-foot
angel wings. IceBar holds 400 people and can be

Comedian and late-night TV host Jimmy
Kimmel partnered with Caesars Entertainment to
open Jimmy Kimmel's Comedy Club at the LINQ

Able Baker Brewing Co. debuted downtown
in September 2019. The 7,500-square-foot microbrewery and taproom, which replaces a long-vacant
furniture store space, has indoor picnic tables, an
in-house scratch kitchen, and more than 30 beers
on tap. There is also a 600-square-foot patio that
seats 40. Brewery tours are available. (1510 South

Italian eatery 1 Terra Rossa returned to Red
Rock Casino Resort & Spa in August 2019, replacing Masso Osteria. Helmed by executive chef Dan
Rossi, the restaurant specializes in traditional Italian
cuisine with many dishes served family style. The

Promenade in May 2019. The 8,000-square-foot
venue aims to capture the spirit of Kimmel's
hometown of Las Vegas, hosting late-night
comedy shows and offering memorabilia and
casual cuisine. The venue also has a bar that
is a replica of the bar in Kimmel's home. The
dual-level venue is available for private events
and seats 54 guests on the first floor and 300
guests on the second floor. With a special event
permit, the second floor can hold as many as 480

Speakeasy and club 2 On the Record
opened at Park MGM in December 2018. The
11,000-square-foot indoor-outdoor venue, which
was designed by Los Angeles-based nightlife
moguls Jonnie and Mark Houston, features
elements inspired by music nostalgia including
framed vinyl albums and a record store entrance.
The venue also has a commissioned 1963 Bristol
Lodekka double-decker bus that was converted
into a DJ booth and bar on an outdoor patio. On
the Record offers three full-service bars, multiple
staging areas for live performances, and three
private karaoke rooms. The venue holds as many

The Las Vegas Convention Center is slated
to complete a 1.4 million-square-foot,
$1.475 billion expansion in December 2020,
making it the second-largest convention
facility in North America.
Area15, a 200,000-square-foot retail
and live entertainment complex, is
expected to open in April 2020 across from
the Strip. The venue will have 32,000 square
feet of outdoor event space to hold as many
as 4,500 people, plus a 7,000-square-foot
indoor event space.
UnCommons, a $400 million mixed-use
community in Southwest Las Vegas, breaks
ground in April 2020. The development will
include a luxury movie theater, restaurants,
and a food hall as part of the first phase,
slated to debut in the fall of 2021.
