Dardenne was equally clear that The
Royal Snail wasn't simply going to borrow its
style from the community; it was going to
part of it. "I didn't just want a hotel that was
inspired by locals. I wanted one that was
created by them," he says. His locavore
mandate was as true for his hiring decision
of the concept design firm, locally based
architect/designer BURO 5, as for his choice
of the young super-star chef, Carl Gillian, to
helm the restaurant, L'Agathopede, and his
willingness to buy from the city's artists,
artisans, suppliers and purveyors.
It also informed his emphasis on being a
good neighbor, whether maintaining a roof
line and architectural profile that wouldn't
dominate the surrounding residential properties, avoiding any major structural
changes to the buildings or incorporating
eco-friendly HVAC systems and lighting to
lessen the burden on the power grid. He did
make one exception to his live-local rule,

calling in Parisian design studio, Muzéo, to
collaborate with BURO 5 on developing 10
guest room themes because of its expertise
in creating experiential, art-driven spaces.
With these parameters in hand, BURO 5
architect Julie Valette and interior architect
Olivier Simon began work to transform a
row of houses from varying architectural
periods into an internationally appealing
lifestyle hotel. They started by insulating
the rear exteriors of the buildings to
improve energy efficiency, then applied a
white plaster finish to merge the quartet of
former residences into the framework of
the new hotel. To put the property's best
(eco) face forward, a quarter of the blended
façade shelters behind a vertical garden
with more than 600 plants. "It was quite a
feat to find the technical means to install
that," says Dardenne.
Inside, the mood of this new Design
Hotels member is authentic and earthy. "The

and be able to feel something

the owner and designers
opened up new solutions like
the internal peek-a-boo window
in this suite. "It was such a
collaborative effort. Sometimes
we forgot Vincent Dardenne was
the client, because he was such
a part of our team," says Julie
Valette, Buro 5.
