MB Contractors found the original jail cell door that leads to Milton's restaurant in a trash heap when the local penitentiary was being renovated. That refurbished piece references the influx of rowdy outsiders who migrated to the town to work in the coal mines during the late 1800s and early 1900s preceding Prohibition. It was during that era that St. Paul earned its nickname: The Western Front. For his eponymous F&B concept, high-profile Appalachian chef Travis Milton wanted an ambiance that balanced a warm and cozy feel with a cool and hip attitude. "It had to be a casual dining environment for guests coming off the ATV trails as well as a comfortable place for people to have a nice evening out," says Schultz. "We didn't want all of the elements to look rustic. But there still needed to be a strong sense of the town's history and vernacular." Also occupying the former retail space on the main level, The Roost-an entertainment room decked out with billiards and games- features a resident-donated miner's helmet that's been repurposed as a wall sconce suspended over the wet bar. Reworked four-wheeler rims play the part of pendants above the communal table. On the second and third floors, the former apartment layouts had to be completely reconfigured to accommodate 30 guest rooms.
