Dinner’s ready! Pick up a meal by heading to your backyard garden BY DEBORAH GEERING T onight for supper, Bob and Marianne Izzo, of Richmond Hill, could be planning a salsa appetizer followed by pasta primavera made with zucchini, yellow squash, red bell peppers and green beans. Near Butler in Taylor County, Bill and Eloise Doty might whip up some stewed purple hull peas over rice and a buttermilk panna cotta with fresh raspberry sauce. And in Jasper, Craig and June McKenzie just might enjoy their first good tomato salad of the season, followed by rhubarb pie for dessert. None of these cooks will have to go farther than their own backyard DAVID H. NASH / DHNASHPHOTO.COM Summertime Pasta Primavera 8 ounces angel-hair pasta 1/4 cup extra-virgin olive oil 1 medium onion, chopped 2 cloves fresh garlic, finely chopped 1/8 teaspoon red pepper flakes 1 small carrot, cut into matchsticks 1 large bell pepper, seeded and diced 1/2 cup broccoli florets 1 large zucchini, sliced or diced for the main ingredients. Just remember to start with the vegetables that take the longest time to cook. 1 large yellow squash, sliced or diced 2 fresh tomatoes, diced 1 dozen snow peas, trimmed and cut into 1-inch pieces Salt, to taste 2 tablespoons coarsely chopped fresh basil 1 teaspoon chopped fresh oregano 1/4 cup grated Parmesan cheese Bring a large pot of salted water to a boil and cook the pasta according to package directions. Drain, reserving 1/2 cup of the pasta water. Meanwhile, in a large sauté pan over medium-high heat, heat the olive oil. Add the onion and cook until just translucent, 2-3 minutes. Add the garlic and red pepper flakes, stir for 30 seconds, then add the carrot and bell pepper. Saute 2 to 3 minutes, then add the broccoli. Saute 2-3 miutes, then add the zucchini, yellow squash and tomatoes. Cook a few minutes and then add the snow peas, salt, basil and oregano. Cook 2 more minutes. When all the vegetables are cooked, add the pasta to the pan. Toss, and then add a small amount of the pasta water as necessary to help distribute the pan juices. Transfer to a serving bowl and sprinkle with the Parmesan cheese. Beyond the savings, gardeners know there is something supremely satisfying about cooking up even the simplest meal when it comes from one’s own garden.
