The great pumpkin Pie is just a piece of what this versatile fruit can do BY DEBORAH GEERING A lthough the history of the jack-o’lantern is often said to have its roots in Ireland, Irish Chef Thomas McKeown had never carved a pumpkin until he moved to the United States. “When I first came to America, I was a student at Johnson and Wales University. I met my wife there, and my first pumpkin was with her—we carved pumpkins at Halloween together,” recalls McKeown, now executive chef at the Terrace Restaurant on Peachtree in the Ellis Hotel in downtown Atlanta. “After we’d done the carving, we toasted the seeds.” Thus began McKeown’s culinary relationship with pumpkins, which by his own account has been a savory affair. “In Ireland, pumpkins aren’t very popular,” he admits. “My mother told me that growing up, they would carve turnips at Halloween. ... It’s only when I came to America that I started to use pumpkins more often.” While working for Chef Joe Leonardi at the Somerset Club in Boston, McKeown learned to prepare dishes such as oven-roasted pumpkin with rosemary and pumpkin gnocchi with spinach. “This is where I got my experience with pumpkin and where I have continued to love savory pumpkin dishes,” he says.
