[See “Champagne and caviar: The gluten-free life,” March 2011, page 44.] As a gym owner in Kennesaw, I encourage all of my clients to go gluten-free in their diets. Due to the destructive effects of gluten on the digestive system, our whole family has made the switch. More energy, better absorption of nutrients and less illness are all beneﬁts we’ve experienced ﬁrsthand by giving up this protein. Three years ago, we had difﬁculty ﬁnding restaurants and grocery stores that catered to our diet, but the tide has turned in Georgia! It’s great to see so many restaurants and shops with options other than wheat or ﬂour-based recipes. The dinners and desserts my wife creates are so tasty, I don’t regret going gluten-free for a second! Keep up the great reporting.
