Salads for all occasions
S
alads can be appetizers or main dishes and go well
beyond merely lettuce and veggies. The possible
ingredients are limitless.
Salads can use up leftover vegetables and proteins, especially cold chicken, seafood or steak. Even day-old bread can
contribute to a salad; the Italian panzanella is a combination of
slightly stale bread, greens, tomatoes, olives and other toppings
you might have on hand. It's substantial enough to serve as a
main dish.
Today, grains often form the basis of a salad. Try farro or
brown rice as a foundation for vegetables and proteins. Pasta
salads are popular, but keep them simple and don't overdress
them. Use orzo combined with a few finely minced vegetables-
including some for color-and some fresh herbs, and then dress
with simple lemon, olive oil, salt, pepper and herbs.
While there are myriad bottled salad dressings on the
shelves, making one's own dressing takes very little time or skill
and yields a far better product. Even a blue cheese dressing can
be made easily and quickly, using a buttermilk base.
Taste, ease of preparation and speed of assembly make
salads an excellent alternative to fast food when on the go. They
satisfy vegetarian and vegan needs but also can host a variety of
proteins for omnivores. Salads are a great way to go green.

Microgreens are a plant's
first true leaves and are exceptionally
tender. The young seedlings are harvested when
less than 14 days old, often with the stems attached, and have a very intense flavor. Common
varieties include arugula, basil, beet, collard,
mustard, daikon, chard and celery. Microgreens
are available at many farmers markets and at
upscale and natural grocery stores, such
as Whole Foods.
