" This is my current go-to snack cake that I make for when I
need a little sunshine in cake form, " Chef Skye Love says. " I love
this recipe because she is a one-bowl affair, and I hate doing
dishes. "
SKYE LOVE'S LEMON OLIVE OIL CAKE
1/2 cup olive oil
1-1/3 cups sugar, divided
2 eggs
1/4 cup milk
1/2 cup sour cream
2 tablespoons lemon juice
Zest of 1 lemon
1-1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cornstarch
1/2 teaspoon salt
Fresh berries and whipped cream, optional, as garnish
Preheat oven to 360 degrees. In a large bowl, whisk together
olive oil, 1 cup sugar, eggs, milk, sour cream, lemon juice and
lemon zest until well-blended. Add the dry ingredients and
whisk until combined. Pour the batter into a lined-but not
greased-8-inch cake pan. Sprinkle the top generously with
1/3 cup sugar.
Bake for 45-50 minutes or until evenly golden and crusty.
Note: Keep an eye on the cake around this time frame, as ovens
may vary. Cool completely before removing from the pan. Enjoy
as is, or add fresh berries and whipped cream. Serves 2-4.

After parting ways with The Expat during the first wave
of the pandemic, Sasser found time to get more involved
with philanthropic organizations such as Let's Talk Womxn,
a collaboration of female restaurateurs, and the Atlanta
chapter of Les Dames d'Escoffier, a nonprofit dedicated to
the advancement of women in food service and hospitality.
" We give a lot of grants, not only to culinary students
but also [to] organizations that help promote women in the
industry in all facets, " she says.
One young Georgia chef navigating the challenges
and rewards of a culinary career path is Skye Love. Love,
23, serves as the pastry chef at Community Brew & Tap in
Cornelia.
She was raised in a true foodie family, as her mother
owned multiple restaurants and runs Calendula Catering in
Lakemont. Love has a passion for art and quickly developed
a knack for creativity in the kitchen, especially when it came
to baked goods and chocolate.
" I love expressing myself and creating beautiful things
out of anything, " she says.
Love already has racked up a vast amount of restaurant
experience. She's worked directly under several chefs in
North Georgia and even abroad in New Zealand, where she
honed her pastry skills while working with Phoebe Miles at
Winona Forever in Auckland.

Chef Savannah Sasser started her own business, Sasser Culinary Insights,
in December 2020. Over the last decade, she has been an executive chef
at several Georgia restaurants, including The Expat in Athens and Twain's
Brewpub & Billiards in Decatur.
