recipes Yummy and healthy soup for cool days Carrot and ginger soup Ingredients: 1 1/4 lb. carrots minced 6 tbs. chopped onion 1/4 c. unsalted butter 1 1/2 c. whipping cream or whole milk 1 pint chicken stock Juice of 1 orange 1/2 tsp. minced fresh ginger 3 tbs. dry sherry Leaves from 1 fresh tarragon sprig salt and pepper to taste Directions In a 4-quart saucepan, saute carrots and onion in 1 tbs. butter for 5 minutes. Add cream, chicken stock, orange juice, ginger, sherry and tarragon; simmer for 15 minutes. Cool slightly. Pour into blender container along with remaining melted butter and blend until smooth. Finish the seasoning with salt and pepper.
