Keeping the main principles in mind, determining priorities,
size and budget are a must in a specialized kitchen

A homeowner in Long Island, N.Y. wanted to expand her kitchen
about 100 percent and connect it to the family room, which has a view of
the courtyard and lovely backyard outside. She sought out designer Vasi
Ypsilantis after she saw some of her work at a designer show house but
worried that her services may be outside of the working budget.
"My reputation as an excellent designer in my community has remained undisputed for more than 20 years, which creates the perception
that I am unattainable," said Ypsilantis, owner of The Breakfast Room in
Manhasset, N.Y. "The truth is that I do charge a bit more for my services
since I employ staff to keep the project running smoothly, but once we
have established a realistic budget, I can help my clients disperse how to
spend it on the items that matter most in the kitchen and to them."
Project Goals and Solutions
The clients, who are in the habit of entertaining upward of 100 guests,
wanted to incorporate kosher elements into an expanded kitchen footprint. The wife wanted a large French antique table instead of an island
to be the center of the space, as this is common in France and she had
grown up there. This communal farm table is where food is prepared and
consumed.
The theme of her growing up in France was more important than
the choice of materials in this kitchen design - she definitely wanted an

old-world space," said Ypsilantis. "It was all about creating a space and a
feeling rather than designing appliances and cabinets."
* Creating counter and storage space. According to the designer,
because the lack of an island eliminated a lot of workable counter space,
she had to place everything around the perimeter, including the sinks,
oven, countertops, cabinets and cooktops. The countertops are ample
enough to accommodate food preparation and for storing multiple sets
of meat and dairy dishes and cookware.
