RESERVA RUM
Zaya Gran Reserva, a member of
the Infinium family, is produced in
Trinidad. Zaya's profile comes from
the blending of multiple rums,
including rare rums up to 18 years
old.
Zaya's rich aroma hints at oak,
molasses, orange, banana and
cocoa. Slightly sweet, Zaya plays
on the palate with a complexity of
flavors: vanilla, caramel, chocolate
and cherry. The finish is full and
smooth.

LEMON-LIME SODA
2-4 MINT SPRIGS
1 TEASPOON SUGAR
¾ OZ. LIME JUICE
Combine mint sprigs, sugar and a
splash of lemon-lime soda. Lightly
muddle until you smell the mint.
Add lime juice and Zaya rum. Fill
with lemon-lime soda and garnish
with a mint sprig.

distinction of being the oldest
Jamaican sugar estate and distillery
in continuous production, for more
than 265 years. Appleton rum
begins life in the lush and fertile
Nassau Valley of Jamaica, where the
estate-grown sugarcane thrives and
gives the rum its terroir. The rum
is perfected by Master Blender Joy
Spence, the first woman appointed
master blender in the world.
Spence selects from rums that have
been aged for at least 12 years in
American oak barrels, giving the
spirit a rich mahogany hue, vanilla
character and robust taste.

Add all ingredients to a mixing
glass with large cubed ice. Stir
quickly until glass frosts, then
strain into old fashioned glass
over large block ice or ice sphere.
Finish it off with an orange twist.

SWEENEY 12
YEAR
The wooden schooner Kirk and
Sweeney smuggled rum from
the Caribbean to the U.S. during
Prohibition. It dropped anchor
just outside of U.S. territorial
waters (on the "Rum Line")
and transferred the barrels to
smaller, faster boats that could
smuggle the rum ashore. The
Kirk & Sweeney rum bottle and
other artistic branding touches
continue the brand's nautical
theme.
Kirk & Sweeney 12 Year is
crafted in the Dominican Republic
from raw sugarcane, then aged for
12 years in American oak casks.
This rum has a nose of earthy
sugar cane and vanilla, flavors of
sweet nectar and honey, then oak
and toffee, and finishing with a
smooth vanilla kick.

The history of Flor de Caña
reaches back 125 years, through five
generations, as the Pellas family
continues to guide the distillery and
support the Nicaraguan community.
The San Cristóbal volcano
provides the distillery's greatest
distinctions: the barrelhouse's
natural ventilation provides
exposure to the surrounding high
volcanic temperatures and to
Nicaragua's tropical humidity, for
a larger angel's share loss and high
interaction between the barrel and
the spirit, resulting in a bold and
complex rum.
Flor de Caña is aged for at least
12 years in small white oak bourbon
barrels sealed with plantain leaves.
Look for aroma and tasting notes of
honey, nuts, fruits, dark chocolate
and tobacco.
This is truly a sipping rum, so
best to enjoy it neat, with a splash
of water or sparkling water. Garnish
with an orange twist.

Ron Zacapa represents the
"heights" of great rum. Besides
being produced from a blend
of vintage rums between 6
and 23 years of age and using
the solera aging process, the
liquor is aged in the highlands
of Quetzaltenango, Guatemala,
7,500 feet above sea level.
Ron Zacapa rum begins with
sweet, first-crush virgin sugar
cane, then aged in barrels that
held robust American whiskies,
delicate sherries and Pedro
Ximénez wines. The result is a
complexity of flavors in the nose
and on the palate: sweet aromas
of caramel, vanilla, cacao and
butterscotch; flavors of dried
fruits, oak, nutmeg, tobacco
and coffee, with a balance of
cinnamon and sweet vanilla.
This is best enjoyed on a single
large lump of pure, clear ice in a
rocks glass.
