Idaho BourBon

Nope, whiskey doesn't have to come from
Kentucky to be called bourbon. To earn
that treasured name, the spirit must be
made from at least 51 percent corn, aged
in new charred oak barrels (for at least two
years to be called "straight bourbon"), meet
proof requirements and be made in the
United States.
The small-batch Idaho bourbon whiskey
from Idaho Bourbon Distillers in Boise
meets those requirements.
The distillery started out with corn
moonshine (corn whiskey with no aging
requirements), including some flavored
moonshines, as well as flavored vodka. Not
content with the typical fruity flavors,

Idaho Bourbon Distillers offered bacon-flavored spirits. Once the corn whiskey had
aged, bourbon was born.
And the rest, as they say, is history.
Including the post on Esquire.com that
listed the best bourbon in every state,
giving that title to this distillery's Idaho
Whiskey. According to BoiseWeekly.com,
it was "the first Idaho bourbon distilled
and aged locally." Another Boise Weekly
report quoted owner-operator Mike
Nicholson as the distillery was still in
build-out, standing in the empty concrete
space before his equipment arrived: "Our
philosophy is kind of more the traditional
Kentucky bourbon process," he said. "My
passion has always been bourbon, so I
kind of wanted to bring some of that to
the West."

"The flavor of the huckleberry is legendary,"
Amit Dhingra, associate professor in the
horticulture department at Washington
State University, told NPR news.
The native Northwest fruit, also the

state fruit of Idaho, looks like a blueberry.
But its fans know the difference-to
acquire the legendary taste, they go forage
through Northwest forests in August and
September to acquire the divine berry.
Forage they must, because, as Dhingra
explained to NPR, "Domesticating the wild
huckleberry is impossible."
