W hat makes the bar at Back stage Bistro
special?
Our staff is one of a kind. The bartenders we have
work effortlessly to take care of every guest that
sits at their bar, and their creativity and teamwork
is more than I could ever hope for.
What makes a good bartender?
Personality. I truly believe that a good bartender has
to have a great personality. Someone can learn recipes
and how to make cocktails, or pour a drink or a glass
of wine; but a bartender is a performer. They are
always being watched, whether they are making
drinks or interacting with guests. Someone can forget
a great drink, but they will never forget great service
or a bartender that leaves an impression.
What's your favorite cocktail, personally and in
serving customers?
My personal favorite cocktail is made with
Pendleton Whisky, apple pucker, cranberry juice,
and a splash of pineapple juice. This drink still has
the flavor of the Canadian whisky but the other
ingredients give it a little bit of sweetness. This is
also my favorite cocktail to suggest to guests when
they are looking for a drink but not sure what to
get. I also love the response we get when we offer
it to a guest who normally wouldn't drink a cocktail with whiskey. They're surprised at how much
they love it.
Is there a best- selling drink at your bar?
What do customers like about it?
The "Clockwork" Orange is one of our best-selling
drinks. This cocktail is refreshing, light, but not
overly sweet. The ginger beer and lime juice give
it just enough of a tart flavor profile to make this
a great drink any time.

1½ ounces 44 North Sunnyslope Nectarine Vodka
½ ounce lime juice
Pour vodka and lime juice into a rocks glass over ice. Fill the glass with half
orange juice and half Goslings ginger beer. Garnish with an orange slice.

he knew," Floyd says of his mentor at Chandlers
Prime Steaks and Fine Seafood in Boise. Carden was
an old-school bartender who plied his trade for 50
years and brought the 10-minute martini to Boise-a
smooth, romantic twist on a stirred martini.
"I got really lucky with an excellent mentor," Floyd
adds. He's been at Chandlers for eight years, working
his way up, and now has been in management for
the past three years.
What's special about the contemporary craft cocktail movement?
What's special is the resurgence of historic cocktails. After the crazy '80s and '90s, people got
excited about drinking finer things. Today we go
back further, and even dig up history, finding cocktails in magazines and articles. People are looking
