Heat oven to 350˚F. Spray 8-inch loaf pan with cooking spray, then line the bottom and two long sides with
parchment paper. In a small bowl, whisk whole eggs,
egg yolks and water. In a large bowl, beat together sugar,
butter, vanilla and almond extract, and salt on mediumhigh for 5 minutes until light and fluffy. While continuing
to mix, add egg mixture a few teaspoons at a time until
well emulsified after each addition. Full addition should
take 5 minutes. Fold flour in two batches. Fold gently, but
thoroughly, until no trace of flour remains. Transfer to prepared pan and smooth top; gently tap pan on counter to
remove any air bubbles. Bake in center of oven for 55-65
minutes, until golden brown and a toothpick inserted in
center comes out clean. Cool in pan for 15 minutes, then
turn onto rack for another 20 minutes.
When cake is mostly cool, cut into 12 ½-inch thick
slices. Brush both sides of each slice liberally with bourbon. Melt a bit of butter in a large skillet over mediumhigh heat. Working in batches of 3-4 slices, fry each slice
for 3-4 minutes on each side, until toasty brown. Add
additional butter between batches. Transfer to a platter
and serve warm with berries and whipped cream, if
desired. Can be cooled and kept in airtight container for 3
days, gently rewarming in a skillet.
