Barrels: Legal guidelines
call only for " charred new oak
containers, " which leaves great
leeway for creativity.
To char barrels, cooperages
gently toast or ferociously burn
the inside of each barrel. This
burning process adds to the
chemical magic and subtly affects
the palate magic. Char levels
typically range from #1 (burned
for 15 seconds) to #4 (55 seconds),
sometimes up to #5 and higher.
Charring methods can also result
in more surface area for the
liquor to interact with and affect
filtration.
Bourbons from Reservoir
Distillery, says Carpenter, age in

Oak: Although barrels made
with American oak are frequently
used for aging bourbon, other
oak trees can find their way to be
used in barrels, too. Of the 600
species of oak, four are widely
used in aging spirits and wine:
American white oak, European
oak, French oak, and Japanese
oak. Each species has a different
chemical composition, and even
the microclimate where a tree
grows can affect its taste and
performance.
Size: In barrels, size matters. In
addition to the standard 53-gallon
barrel, distillers may use smaller
containers, say, from five-gallon
up to 32-gallon.
The greater ratio of oak surface
to whiskey in a smaller barrel
allows for faster aging, especially
beneficial for new distilleries
anxious to get product to market.
The alcohol more quickly draws
out dissolved sugars and other
compounds that contribute
flavors like vanilla, spice and
oak. At the same time, shortened
aging cuts down on oxidation
and maturation processes, which
contribute flavors like leather and
tobacco.

modifying the definition of
bourbon to require aging in
