approximately 50 gallons
capacity. " After soliciting
comments, it decided against the
change and continues to allow for
different sizes and shapes of oak
containers.
Here in Virginia, Ragged Branch
bourbons are aged for more than
four years, many for five years, in
53 gallon barrels.
Ironclad Straight Bourbon
is aged more than two years in
30-gallon charred oak barrels.
After initial aging in new
oak containers, some distillers
distinguish their bourbons with
a secondary aging. Ironclad
Distillery, for example, has
produced Sweeter Creations
Maple Syrup Cask, finished in-
you guessed it-maple syrup
barrels. Other finishing casks
that Ironclad has used include
AR's Hot Southern Honey, Flying
Fox Winery Petit Verdot barrels,
and barrels that aged Vessel Craft
Coffee beans.
* Aging: Time in a barrel
matters, but conditions are also
important. For example:
* Temperature: Weather varies
considerably across the U.S. -
think Texas versus Virginia versus
Michigan.
* Temperature variations:
Temperature fluctuations
influence the " breathing " of the
barrels, and barrels stored in a
climate-controlled warehouse face
less extreme fluctuations than
those aged in open-air storage.
* External air: Barrels at
coastal Islay distilleries, for
example, are surrounded by salty
coastal air, influencing the Scotch
aging inside.
* Movement: Jefferson's Ocean
bourbon is aged in a ship sailing
around the world.
* Within a warehouse: Barrels
on top of a stack are in a warmer
microclimate than barrels on the
bottom. Another factor includes
how closely barrels are stored and
stacked, allowing or restricting
airflow.
So, how do Virginia bourbons
stack up?
" [One] reason for the distinct
character of our bourbons is
the maturation, " says Prewitt
of Bowman bourbons. " Our
warehouses have a unique
design and aging environment-
influenced by being on the fall line
between two geographic areas,
that of the Piedmont region to
the west and the Tidewater and
Atlantic coastal plain on the east. "
Ironclad Small Batch Bourbon,
aged over two summers in
new, American oak barrels, is
" characterized by the brackish
air from Virginia's James River,
balanced by the sweet caramelized
oak sap from small, charred
barrels. "
We've come a long way, Virginia
bourbon lovers.

lately. With bourbon distilleries

industry has gone a long way in
removing the marketing myth that
bourbon had to be from Kentucky. "
" For some time, consumers have
been focused on the provenance
of their food, " says Karlson.
" This focus on staying local has
expanded into spirits as craft
operations increase in all 50 states
... We at KO Distilling are proud to
make a bourbon that is not only
an exceptional representation of
Virginia, but also one that has
won numerous awards. We are
just at the beginning of the craft
of bourbon and expect to see
innovations with aging, finishes
and even blends. It's a very
exciting time for bourbon. "
Since Reservoir Distillery
makes its products from start to
finish, it can " control all aspects
of production, " says Carpenter.
" Our motto is 'provenance is
the pathway to perfection' and,
for us, it's true. " And since that
provenance is Virginia, that gives
Commonwealth drinkers a point
of pride, too.
" I think the stigma has
been broken that bourbon
is a Kentucky-only product, "
Carpenter adds. " Reservoir [and]
other non-Kentucky producers
have proven that world-class
bourbon can be made all over
the United States. And Virginia
is packed with award-winning
distilleries-we're in great
company and have an incredible
fan base to thank for that! "
