Apple filling
▷ 5 CUPS PARED AND THINLY
SLICED TART APPLES (ABOUT 5
MEDIUM APPLES)
▷ 6 TABLESPOONS BUTTER
▷ 1-2 TABLESPOONS BOURBON
▷ ½ CUP SUGAR
▷ ¼ TEASPOON GROUND NUTMEG
▷ ¼ TEASPOON GROUND
CINNAMON
▷ 3 TABLESPOONS FLOUR
▷ ¼ TEASPOON SALT
Heat oven to 425 degrees. In a
saucepan, heat butter to melt then
add 1 to 2 tablespoons (or more)
bourbon and reduce liquid over
medium heat. Once liquid has
reduced by a quarter, add spices
and sugar slowly. Continue to stir
until heated through and the liquid
begins to form a loose caramel
sauce. Remove from heat. Add
flour to the bowl of sliced apples
and mix slightly to coat the apples.
Take prepared crust out of freezer,
arrange apple slices in the pie crust
and then pour sauce over the slices.
Cover edge with a 3-inch strip of
aluminum foil. Remove foil during
the last 15 minutes of baking. Bake
until crust starts to brown and juice
begins to bubble, 40 to 50 minutes.
Bourbon Whipped Cream
▷ 2½ CUPS HEAVY CREAM
▷ 1 8-OZ. CARTON SOUR CREAM
▷ 1 CUP POWDERED SUGAR
▷ 2 TABLESPOONS BOURBON
In a bowl beat heavy cream, sour
cream, powdered sugar and
bourbon with mixer on high until
stiff peaks form. Serve with pie.
