recently opened a second location in Hendersonville.
After the caprese salad, a bit of sorbet, then a flaky trout with
light breading.
“When people come to the mountains they want to experience
the cuisine of the mountains,” says Wilson. “I’ve done trout so
many ways here” – last season, he created a baseball-inspired variation – “pretzel-encrusted trout with root beer aioli.”
The building is old; it once housed the Transylvania Times, and
a hair salon. “I’ve had people come and bring me pictures.” The
space is cozy now, with deep red walls, exposed brick, local art,
yellow pine floors, amber glass candle votives. The bar top is a slab
of ambrosia maple that used to grow along King Street; the bar back
is 1930s art deco, from a Fowler’s Dispensary in Lebanon, Ky., and
the bar itself is made out of antique panel doors salvaged from a
house on Main Street.
There’s live music tonight, a local duo; I leave with freshly-made
key lime pie, which I enjoy in my room where I’m overnighting –
the Red House Inn, within walking distance of Brevard’s Main

Street, in another historic building – built in 1851 as a general store,
now a B&B – in between, a courthouse, railroad station, school
and residence.
Daniel and Tracie Trusler run the inn these days. Daniel’s from
England (they met when Tracie was studying abroad in college) and
a couple days a week he’ll do an English breakfast, complete with
roast tomatoes, marmalade made from his mother’s recipe, multigrain English muffins from Bracken Mountain Bakery in Brevard,
English bacon and sausage and eggs all from state and regional farms.
Daniel does most of the cooking, including the amazing biscuits
– “I grew up in the South and I can’t make biscuits,” says Tracie,
but “I do make all the jams.” Strawberry rhubarb, raspberry (from
Queens Produce and Berry Farm in Pisgah Forest), plum (from the
Whistlestop Market in Cedar Mountain), and of course the marmalade. She uses her grandmother’s pressure canner – “I usually
double the recipe and have two kettles going.”
The breakfast is served on local pottery in the dining room, on the
porch and in the sunroom. The coffee is good and strong (freshly
roasted by the Brown Bean in Brevard), the sausage from Tennessee,
