Meatloaf & Greens:
WADE'S SOUTHERN COOKING,
SPARTANBURG, S.C

Carole Lindsey Miller has known Wade's as a family
restaurant from the other side of the counter, not as
a customer. Her parents, Wade and Betty Lindsey,
started the restaurant in 1947, serving old-fashioned
meat and vegetables - everyone got the same meal,
and many of their customers were workers at Draper
Corporation and Duke Power.
"Wade's was our family space when I grew up," says
Miller. "I was born the year after our parents opened
the store, so a cardboard box under the counter was
my crib. I remember dancing for the customers to the
juke box music; sleeping in a booth while I waited for
Mom to take me home; and family time was Friday
night steak night at Wade's. I started using the cash
register to check out curb boys when I was 13 years
old."
In the 1950s and 1960s, Wade's was a drive-in. In
1977, the Lindseys retired, and Miller's brother,
Hamp, convinced her to help him continue to run
the place. They dropped beer from the menu and
turned it from a drive-in into a family restaurant, and
today they serve up to 3,000 people a day, dishes that

derive from Betty Lindsey's recipes.
Meatloaf and turnip greens are staples on the
menu. "Keeping meatloaf together is a challenge," says
Miller. "We laugh at the prep cook" who has to slap
the meatloaf in the pan to get the air out of it.
As for the turnip greens, Wade's has stopped using
fatback grease to make it. "We've found the best turnip greens come from Georgia."
Most of Wade's ingredients come from wholesale
vendors, but when Miller shops for herself - "if I'm
going to get local, I go to the farmer's market," or to
the Clemson extension stands - "you put money in
the jug.
"I'm a fresh-lettuce freak," Miller says, and she
makes mostly salads with them: "when you sling some
apples and pears and feta cheese at it, that's always
good."
Any customer favorites at Wade's? "It's usually
more. I want more banana pudding," for instance.
And the banana pudding, like most of the recipes at
Wade's, is "one we don't dare share." She will say that
the prep cook will spend an hour stirring a 20-gallon
kettle of banana-pudding-to-be.
Turkey and dressing is by far the most popular dish
at Wade's, however: "You can come on Thursday and
the line goes out the door."
